Love to eat it right out of the oven hot, but it is also good on a sandwich, sliced and put on hearty homemade Whole Wheat Bread with Mayo/Veganaise the next day. It is good on crackers also. Yours to Enjoy, Judy Meato's 1 cup Peanut Butter 2 16 oz. cans Petite Diced tomatoes with Green Chilies or Jalopeno's 1 tsp. Sage 1 c. Onion, diced 1 tsp. Salt 3/4 c. flour(more or less) Mix all the ingredients, adding the flour until it is thick like cake batter mixture. Put into a sprayed casserole dish. Bake @ 350 for about 1 hr. My name is Heather,I am new to the group, I have been lurking for awhile (saw a post on an inactive vegetarian group about this group). I have seen so many recipes that I want to try, but I have to wait until things calm down a bit around here. Next I made the Meato's last night. It was really good and I will definetly have it again. My nonvegetarian family seemed to like it too. I heated some corn tortilla's in oil and we made tacos with Meato's, rice, tomato, lettuce, cheese and salsa.Next time I will probably top with red onion too. I am looking foward to eating the leftovers. Thanks for the recipe.
