Summer Fruit and Green Salad

 

4 cups spring greens washed and gently dried

1 large ripe banana

1/2 large ripe nectarine

6 large-medium strawberries

1/2 cup blueberries

any other fresh fruit desired

1 small handful of almonds

1 small handful of cashews

1 small handful of dried cranberries or raisins

1 small handful of sunflower seeds or pepitos

1/4 cup balsamic vinegar

1 tbsp sugar, honey or maple syrup

1 tsp seasoning salt

3 large fresh basil leaves and/or several fresh mint leaves, minced

 

Slice all the fruit (except blueberries) into bite-sized pieces.

Add fruit, dried cranberries or raisins, and nuts/seeds to the

greens and gently toss. In a small bowl, mix remaining ingedients

and stir to blend. Pour over salad and toss again to coat.
