Vegetarian Sloppy Joes 1 tablespoon vegetable oil 1 medium onion, chopped 1 green, red,orange or yellow sweet pepper, chopped 3 cups cooked brown rice 2, 16 ounce can Mexican style pinto beans (or your own. I cook dry beans weekly and use them) 3/4 cup barbeque sauce Saute onion and pepper in oil. Add cooked brown rice, drained beans and barbeque sauce. Simmer 10 to 15 minutes.
