If I don't have fresh mushroons I make it away and I add some sliced canned mushrooms. You can add some chopped up smoked almonds if you want to rush the recipe along. Brown Rice Mushroom and Onion Pilaf with Nuts 1/2 large onion, chopped 1 cup sliced mushrooms 1 TBS olive or canola oil 1 cup brown rice (not instand) 2 1/3 cups veg. broth 1/2 cup toasted pecans or walnuts Brown chopped onion and sliced mushrooms in a large saucepan with one TBS olive oil, about 5 minutes. Add one cup brown rice and stir to coat grains in oil. Add two cups broth, bring to boil, then turn down to simmer cover pan. Simmer for about 45 minutes, or until all liquid is absorbed.
