Guest guest Posted June 18, 2006 Report Share Posted June 18, 2006 Spicy Slow Cooker Black Bean Dip 2 (15 ounce) cans black beans, drained 1 (10 ounce) can Rotel tomatoes, in sauce, any flavor 2 chipotle chiles in adobo, finely chopped 1 tablespoon adobo sauce 3 tablespoons finely chopped onions 1/2 teaspoon dried oregano 2 tablespoons chopped fresh cilantro 2 garlic cloves, minced 1 lime, juice of 1/2 cup grated jack cheese(or cheese of your choice) Mix together the first 9 ingredients in a slow cooker. Cover and cook on HIGH for 1 hou or low for 2 hrs. Gently mash the beans along the side of the crockery. Sprinkle with cheese, cover, and cook for 30 more minutes. Serve with tortilla chips.
