Judy you can add a can of rinsed drained black beans or pinto beans. How funny,

PT just reposted this to

her group.

This came to mind when you requested a pasta bean salad with mayo. I make it

often and toss beans in it. This is from my Native Foods cookbook and PT has

the same book, I made her buy it..LOL

" Fleetwood Macroni Salad "

 

2 cups elbow macaroni, boil and drain

1 cup fresh or defrosted corn kernels

1/2 cup chopped celery

1/2 cup chopped carrot

1/2 cucumber peeled and chopped

1/2 cup red bell pepper chopped

1/4 cup chopped parsley (I used cilantro)

1/4 cup chopped chives or green onions

1/4 cup lemon juice

1 cup vegan mayo or mayo of your choice

1 1/2 tsp. salt

1/2 tsp. pepper

(options: sliced olives, rinsed canned beans, cherry tomatoes,

few crushed capers, pimentoes, crushed pepper flakes, some herbs, etc.

 

Toss all ingredients together, and put on some hits from the 70's.

If I'd been out till quarter to three

Will you still need me, will you still feed me,

When I'm sixty-four.
