This came to mind when you requested a pasta bean salad with mayo. I make it often and toss beans in it. This is from my Native Foods cookbook and PT has the same book, I made her buy it..LOL Donna " Fleetwood Macroni Salad " 2 cups elbow macaroni, boil and drain 1 cup fresh or defrosted corn kernels 1/2 cup chopped celery 1/2 cup chopped carrot 1/2 cucumber peeled and chopped 1/2 cup red bell pepper chopped 1/4 cup chopped parsley (I used cilantro) 1/4 cup chopped chives or green onions 1/4 cup lemon juice 1 cup vegan mayo or mayo of your choice 1 1/2 tsp. salt 1/2 tsp. pepper (options: sliced olives, rinsed canned beans, cherry tomatoes, few crushed capers, pimentoes, crushed pepper flakes, some herbs, etc. Toss all ingredients together, and put on some hits from the 70's.
