They are very popular here in Australia... and were originally made and sent to men in the A ustralia N ew Z ealand A rmy C orp back in WWI. ANZAC Biscuits makes approx. 3 dozen 1 c. rolled oats 3/4 c. coconut 1 c. plain flour 1 c. sugar 4 oz. butter 1 Tbsp. golden syrup ( dark Karo or treacle will work dep. where you live) 1 1/2 tsp. baking soda/bicarbonate of soda 2 Tbsp. boiling water METHOD: Combine oats, flour,sugar, and coconut in large bowl. Combine butter and syrup in med/small saucepan- stirring over gentle heat until melted. Mix soda and water ( I use my measuring cup so I don't dirty another item), then stir into syrup mixture(watch out it fluffs up!). Then mix into dry ingredients. Drop by dessertspoonsful onto greased tray- allow room for spreading. Bake 20 mins in a slow oven ( approx. 300 º F or 150º C ) until golden brown. Loosen on trays while warm- then let cool on tray. These are a very hard /crispy biscuit (cookie) that my (English) husband says are perfect for coffee as the texture allows for the coffee to be slurped all through it but doesn't get soggy so quick after dunking that it falls into his mug... me- I just eat 'em crunchy! lol Quote Link to comment Share on other sites More sharing options...
