Guest guest Posted June 16, 2006 Report Share Posted June 16, 2006 I made these the other night with crockpot stew ..... now I gotta tell ya- I am not big on cornbread type things even though I WANT to like it....but since this had the cheddar cheese in I thought I would give it a go since I was having stew and wanted something more to go with it. These are AMAZING. So EASY to make ( I used my food processor to cut the butter into the dry ingredients) and so light and moist - delicious! I HIGHLY recommend them to the group. They are an addition to our 'must have again and again' list. In case anyone else wants to try them - the recipe <from the files> is: Cornmeal Cheddar Biscuits 1 1/2 cup flour 1/2 cup yellow cornmeal 2 tsp sugar 1 Tbs baking powder 1/4 to 1/2 tsp salt 1/2 cup butter or margarine 1/2 cup shredded cheddar cheese 1 cup milk In a bowl, combine dry ingredients; cut in butter until crumbly. Stir in cheese and milk until moistened. Drop by 1/4 cupfuls onto an ungreased baking sheet. Bake at 450 for 12-15 minutes or until light golden brown. Serve warm.
