I have not seen an egg replacer here in my little part of Oz- so I am going to have to get some place different to find it. I would feel so much better about baking and things where I can easily substitute. Now- this is the madness part..... ready for this..? I am not sure what size our tea and table spoon measurements are.. ( I think I can find it in a Women's Weekly Cookbook though-will check in a minute) but I do know that AU standard measurements are larger than US- but not sure how it compares to you in Scotland! Bless your heart. We use metric weights here- I have scales that allow me both grams and ounces so I can still do all my American recipes too if I want or need. Since Oz is a Commonwealth of the Queen's...one would WANT to think that AU and UK measurements would be the same......but....... all I know is this- when I do a recipe that calls for a cup I use a cup measurement..... and the same with all the others- I just use what I have and if I get a little more product than what I would have had in the USA- oh well. I figure that most things will turn out proportionately as long as i am consistent using the AU measuring tools I own. Let me go see if I can find that *note in the AWW cookbook...... ah here it is.... there is a whole page of conversions and several notes to UK, US , and even NZ readers that the AU standard is different- as it is metric. But sticking to the teaspoon/tablespoon quantities: an AU Teaspoon is 5ml and Tablespoon is 20 ml. ( where as US and UK are meant to be 15 ml. How much can 5 ml really be!?? I know- one or two it won't make a difference- but if it were alot of them it would add up..but then we'd be using a cup measurement anyway....which *is* bigger here....... 1c = 250 mls.....but I don't know what the US/UK is! lol) If you would like- (or anyone else who is interested) I can send a scan or pic of this page to you- and you can print it off for future reference if it would help. Just email me offlist and I will be glad to work things out! Oh- and their eggs are large that they use- which is a 60g egg! LOL!) If someone can give us regular eggs equivalent for that recipe it will be the best thing- and then we can just use the required amount that our brand of replacer tells us is equivalent to one egg.
