Guest guest Posted June 16, 2006 Report Share Posted June 16, 2006 Tomato Bruschetta 10 plum tomatoes diced 3 cloves garlic minced 3/4 cup fresh basil leaves coarsely chopped 8 oz.mozzarella cheese or firm tofu cut into bite-sized pieces 1/2 cup mixed olives, sliced 1 tablespoon capers rinsed and drained 1 teaspoon fresh lemon juice 1/3 cup extra-virgin olive oil Salt and pepper to taste Mixed Salad Greens or bread rolls In a medium bowl, mix all ingredients until combined. Cover and let set at room temperature until ready to serve. Serve on mixed salad greens on individual salad plates or split rolls and serve on top of the bread. How low will we go?
