It turned out so delicious I know I will be making this one again and again. Artichoke Rice 1 cup rice 2 cups no-chicken broth [or veggie broth of your choice] 2 (6 1/2 ounce) jars marinated artichoke hearts ~ with liquid 1/3 cup Vegenaise 3/4 tsp. curry powder 1/4 tsp. garlic powder 4 green onions, sliced 1/2 green pepper, chopped 12 stuffed green olives, sliced Cook rice in veggie broth until tender and remove from heat. Drain and chop artichoke hearts; reserve marinade. In a small bowl, blend together marinade with the vegan mayo, curry and garlic powder. Stir marinade mixture into rice. Add chopped artichokes, onions, peppers and olives; toss well. May be served warm or cold.
