Guest guest Posted June 15, 2006 Report Share Posted June 15, 2006 I was reading through my batch of saved digests, and saw several posts about those faux crab cakes made with zucchini. It reminded me of this summer favorite dish. I love these served with fresh chive sour cream and a salad of baby greens. Zucchini Pancakes 1/2 cup all-purpose flour 1/2 cup grated Parmesan cheese 1/2 tsp dried oregano 1/4 tsp garlic powder Salt and pepper to taste 1 1/2 cups shredded zucchini Few shakes of hotsauce (optional) 1 egg, beaten 2 Tbs chopped onion 2 Tbs mayonnaise 2 Tsp butter or margarine Sour cream, optional In a bowl, combine the flour, Parmesan cheese, oregano, garlic powder, salt and pepper. Combine zucchini, egg, hot sauce (optional), onion and mayonnaise; stir into dry ingredients until well blended. In a large skillet, melt butter. Drop zucchini mixture by half cupfuls into skillet; press lightly to flatten. Fry until golden brown, about 2 minutes on each side. Drain on paper towels. Serve with sour cream or spaghetti sauce and additional Parmesan cheese if desired.
