Onion Cream

 

Oh my, a friend made this for us last night and, its soooooo good. You can add

spices to it but i liked it as is, we had it on toasted bagette slices and a

glass of white wine. You can do so much with this, dip, spread, add to a plain

oil vinegar dressing..try it your way.

 

2 lbs. onions or shallots, diced finely

sea salt

freshly ground black pepper

3 tbsps extra virgin olive oil

 

Saute onions or shallots and a pinch of sea salt and freshly ground black pepper

in extra virgin olive oil for 40 to 45 minutes at very low heat.

Transfer onions or shallots and juices from the pan to a food processor and whiz

until smooth.

Serves 6.
