Chipotle Iron Skillet Cornbread

My name is Leah, I just joined and happy I did.

I only use cast iron cookware and here's my favorite cornbread I make, it's

baked right in the skillet.

 

Chipotle Cornbread

 

1/2 cup milk

1/2 cup buttermilk

6 T. butter or margarine, melted

2 canned chipotle chilies in adobo sauce (chop finely)

1 large egg

1 cup all purpose flour

1 cup yellow cornmeal

2 T. sugar

1 1/4 teaspoons baking powder

1 teaspoon salt

1 cup grated sharp cheddar cheese

 

Preheat oven to 450F. Grease bottom and sides of

a 10-inch iron skillet, heat pan in oven for 20 minutes.

Meanwhile combine, milk, buttermilk, butter, chilies and egg and mix to blend.

Mix flour, cornmeal, sugar, baking powder, and salt in large bowl.

Add milk mixture and cheese to dry ingredients and stir until well

combined.

Pour batter into preheated skillet. Bake until toothpick inserted into center

comes out clean. About 18 minutes.

Cool slightly and cut into wedges and serve.

Yum this sounds good. I love cornbread and love cooking it in cast iron frying

pans
