Guest guest Posted June 14, 2006 Report Share Posted June 14, 2006 Spaghetti with Herbed Tomatoes 8 ounces spaghetti 2 tablespoons olive oil 1 small garlic clove, minced 3 medium tomatoes, diced 2 teaspoons basil 1/2 teaspoon salt 1 package shredded mozzarella cheese, 4 oz. 1/4 cup grated Parmesan cheese In 6 quart saucepan over med. heat, in hot olive oil, cook garlic until tender. Stir in tomatoes, basil and salt; heat through, stirring occasionally. Drain spaghetti. Return spaghetti to saucepot; toss gently with tomato mixture, mozzarella and Parmesan. Serve immediately.
