Guest guest Posted June 13, 2006 Report Share Posted June 13, 2006 Mushroom Herbed Couscous 1 cup sliced fresh mushrooms 1 tsp. margarine 1 cup water 1 tbsp. chopped fresh parsley 2 tsps. chopped fresh basil 1/2 tsp. chopped fresh oregano 1/4 tsp. salt freshly ground black pepper to taste 2/3 cup couscous 1 medium tomato, seeded and chopped In a medium saucepan, cook mushrooms in margarine until tender. Carefully add water to saucepan. Stir in fresh herbs, salt and pepper. Bring to a boil. Remove from heat and stir in couscous. Cover and let sit for 5 minutes. Stir in tomato and serve hot. Serves 4.
