Guest guest
Happy Monday Everyone! I made stuffed zuchini for dinner last night... I didn't use a recipe but I can give you a little bit of an outline of what I did. I cut four zuchini in half lenghtwise and hollowed them out with a vegetable peeler. In a separate bowl I prepared a handful of TVP with boiling water. When the TVP was soft I flavored it with a splash of Bragg's Liquid Amino acids, pepper, garlic and onion sauteed in olive oil, a pinch of ground savory, oregano, salt, dried parsley, and the minced insides of the zuchini. I stuffed this mixture into the zuchini, topped with breadcrumbs, and baked it on 350 degrees until the zuchini was soft. I topped the zuchini with a sauce I threw together using the leftover juice from a can of tomatoes, more sauteed garlic and onions (Vidalia of course because this is Georgia!), and the same spices I used for the zuchini stuffing. I am usually a recipe only girl but I think this turned out extremely well. I am pleased! Have a great day! Whitney
