Portia Holubtsi (Ukrainian Caggabe Rolls) 2 cups med. buckwheat groats 1 egg 5 tbsp. cooking oil Boiling water 2 tsps. salt 2 stalks chopped celery 1 tbsp. chopped parsley 1 med. onion, chopped fine and browned in cooking oil Salt and pepper 1 (10 1/2 oz.) can tomato soup Pick over the groats; put into a shallow baking dish or spread on cookie sheet. Add egg; mix very thoroughly. Dry mixture by placing in oven at 350 degrees, stirring frequently, until the kernels are separated, very dry and lightly browned. (Be careful not to scorch.) Now put groats into a pot; add oil, salt, and boiling water, maybe 5 cups or so. Bring to a brisk boil; cook until water is almost absorbed and graots are tender. Add celery, parsley, onion, salt, and pepper; mix thoroughly. Fill cabbage leaves like you normally prepare for pigs in a blanket. Arrange in layers, salting each layer and covering with tomato soup mixed with some water. Cover with cabbage leaves and bake at 350 degrees until cabbage is done. Serve with potatoes on the side.
