I usually use soymilk however, and mine is unsweetened, so I use more tea leaves (double, or all I can taste is soymilk!). I also usually don't bother with the green tea powder on top - it looks nice for guests, but not worth the fuss just for me! Oh, and BTW, if you use ricemilk - it will not froth; it hasn't got enough protein in it as far as I can tell. Green Tea " Cappuccino " serves 1 1 1/2 tsp green tea leaves 1 c whole milk 1 tsp honey Combine 1 1/4 tsp of the leaves, the milk, and and honey in a small saucepan. Bring to just a simmer, stirring to dissolve the honey; immediately cover the pan remove from the heat. Let steep for 4 minutes. Meanwhile, in a small mortar, use a pestle to finely grind the remaining 1/4 tsp tea leaves to a fine powder. Pour the infused milk through a fine mesh sieve into a manual glass milk frother. Holding the beaker steady with a potholder, plunge very gently about 10 times, to create a not-too-stiff froth on top of the milk. Pour into a large warmed coffee cup and lightly dust with teh powdered tea leaves.
