Guest guest
Hi, I am new here but not very active. I am a new vegetarian and I was having trouble beginning. But I signed up for a vegetarian menu-mailer and they send me a grocery shopping list each week. So I haven't come here very much for recipes. But I plan too. I am here because I wanted to use all the leftover in the ref. before shopping again. Here is what I put together and my husband and I both loved it. I used a rice cooker (looks like a small crock pot). You can put this in a sauce pan if you want to stand over it and watch it cook. 1 small head of shredded cabbage (left overs) The juice of 1 lemon A small dash of sugar or substitute (optional) garlic, salt, pepper to taste 1/2 to 1 cup water. Depending on how much cabbage you have and if you want a soup, stew or if you want to use this as filling for dumplings, noodles etc.... A handful of trail mix (nuts and dried fruits) Dash of Olive Oil. Cook down until cabbage is tender. Eat and enjoy. We had this the first night as a soup then the next night we cooked this and added it on top of some cooked whole wheat noodles. And then we had a little left over and I made ravioli with this cabbage mixture as a filling with a tomato sauce on top. I hope you enjoy this. penni
