Guest guest Posted June 8, 2006 Report Share Posted June 8, 2006 Little Potato Pie (kids recipe) The munchkins love this. 3 medium potatoes, thinly sliced 2 medium carrots, grated 3 green onions, chopped, including green tops 1 cup vegetable broth 2 tablespoons chopped parsley Preheat oven to 350 degrees Arrange 2 layers of potatoes around a 9 inch pie or quiche pan that has been sprayed with a nonstick coating. Spread the carrots and onions over the potatoes. Layer the remaining potatoes on top. Pour the vegetable broth over the top, cover, and bake 1 hour. Uncover and sprinkle parsley over the top. Bake, uncovered, 10 to 15 minutes. Let stand 10 minutes, then cut into pie-shaped wedges. Serves 4. Quote Link to comment Share on other sites More sharing options...
