Guest guest Posted June 8, 2006 Report Share Posted June 8, 2006 Spiced Apple-Carrot Bake 1 tbsp. firmly packed light brown sugar 1/4 tsp. ground ginger 1/8 tsp. ground nutmeg 2 cups diagonally sliced carrots, cooked tender-crisp 4 small apples, cored and thinly, sliced 1 tbsp. plus 1 teaspoon butter Preheat oven to 350 degrees. In small bowl com-bine sugar, ginger, and nutmeg; set aside. Spray 1%-quart casserole with nonstick cooking spray; arrange 1/2 cup carrots in casserole, top with 1/4 of the apple slices, and sprinkle with 1/3 of the sugar mixture. Repeat layers 3 more times, ending with sugar mixture, dot with butter and bake until carrots and apples are tender and topping is lightly browned, 15 to 20 minutes. Makes 4 servings.
