Guest guest Posted June 8, 2006 Report Share Posted June 8, 2006 Mock Split Pea Soup 2 carrots, peeled 2 celery stalks, chopped 1/2 cup chopped parsley 1 onion 4 cups water or vegetable stocl 2 cups crisp steamed green beans 1 1/2 crisp steamed asparagus dash of mace 1 bay leaf 1/2 teaspoon salt (or Braggs) 1/2 teaspoon cumin, or herbes de Provence Chop all vegetables in food processor and add to 4 cups of water or stock and bay leaf in a soup pot. Lightly simmer vegetables until just softened, about 10 mins., remove bay leaf. Put all back into the food processor and puree until tick, creamy texture is acheived. Add salt and seasonings.
