Guest guest Posted June 8, 2006 Report Share Posted June 8, 2006 Mango Brown Rice 1 tbsp. olive oil optional 1 tbsp. soy sauce 1/4 cup pineapple juice 1 tbsp. brown sugar 1 tsp. fresh, chopped ginger 1 green bell pepper, diced 1/4 cup almonds, slivered 2 mangos, soft, peeled, seeded and cut into cubes black pepper to taste 4 cups hot, cooked brown rice In a small bowl, combine olive oil, soy sauce, pineapple juice, brown sugar and ginger. In a medium bowl combine, green bell pepper, almonds, mangos and pepper and toss to mix. Add soy sauce mixture to rice and stir to mix. 6 servings.
