Okra and Rice Skillet 1 tsp. vegetable oil 1/3 cup uncooked regular long grain rice 1/4 cup chopped onion (about 1 small) 1 clove garlic, finely chopped 1 cup tomato (about 1 large) 2/3 cups vegetable broth 1/2 tsp. chopped fresh or 1/8 tsp. dried thyme leaves 1/4 tsp. pepper 1/8 tsp. red pepper sauce 1 small bay leaf 8 ozs. okra, cut into 1/2 inch slices or 1 pkg. 10 ozs. frozen cut okra can be substituted for the fresh okra, thaw just enough to separate. Heat oil in 10 inch skillet over medium high heat. Cook rice in oil about 3 minutes stirring frequently, until golden brown. Stir in onion, bell pepper and garlic. Cook 5 minutes stirring frequently, until onion begins to soften. Stir in remaining ingredients except okra. Heat to boiling; reduce heat. Cover and simmer until rice is tender. Stir in okra.
