Guest guest Posted June 6, 2006 Report Share Posted June 6, 2006 This is a quick, easy potluck pleaser. I just love making it when cucumbers are in abundance and summer breeezes are a'blowin'. The Native Food's Black Creek Ranch dressing is awesome in this recipe and it makes it vegan. [i think I shared that recipe here so it is in the files from Tanya Petrovna's Native Foods Restaurant Cookbook ~ very groovy cookbook you gotta buy, beg, borrow or ... I won't say steal. *lol*] Cucumber Shell Salad 1 package (16 oz) medium shell pasta 1 package (16 oz) frozen peas, thawed 1 medium cucumber, halved and sliced [i deseed mine *burp*] 1 small red onion, chopped 1 cup ranch salad dressing Cook pasta according to package directions; drain and rinse in cold water. In a large bowl, combine the pasta, peas, cucumber and onion. Add dressing; toss to coat. Cover and chill at least 2 hours before serving. I am SOOOO hooked on pasta salad and to satisfy my husband I just let him toss turkey in his so I am not cooking 2 meals. And the cucumbers AND pasta and ranch dressing were all on sale...woo hoo!
