Guest guest Posted June 5, 2006 Report Share Posted June 5, 2006 Tabbouleh Salad with Parsley and Mint 3/4 cup bulgur 3/4 cup boiling water 2 tomatoes, halved, seeded and diced 1 small english cucumber, diced 3 green onions, thinly sliced 2 cups chopped fresh parsley 1/2 cup chopped fresh mint 1/4 cup lemon juice 1/4 cup olive oil 1 clove garlic, minced (optional) 1/2 tsp. salt 1/4 tsp. pepper Place bulgur in an 8 " square baking dish and pour the boiling water over it. Cover dish tightly and let sit 30 minutes. Fluff gently. Combine bulgur, tomatoes, cucumber, green onions, parsley and mint. Whisk together lemon juice, oil, garlic, salt and pepper. Toss with salad.
