CUBAN BLACK BEANS AND RICE Ingredients: - 1 tablespoon olive oil - 1 cup onion, chopped - 1 green bell pepper, chopped - 2 cloves garlic, minced - 1 teaspoon salt - 1/8 tsp ground cumin - Dash freshly ground black pepper - 4 tablespoons tomato paste - 1 (15.25 ounce) can black beans, drained, reserve liquid - 1 cup uncooked white rice DIRECTIONS Heat the olive oil in a saucepan over medium heat. Saute onion, green bell pepper and minced garlic. When onion is translucent, mix in the salt and tomato paste. Reduce heat to low and cook for 1 minute. Stir in the beans and rice. Pour the liquid from the beans into a large measuring cup and add enough water to equal 2-1/2 cups. Pour this liquid into the bean and rice mixture. Add cumin and black pepper. Cover and simmer over low heat for 35-40 minutes, or until the liquid is absorbed and the rice is cooked. Cuban Bread One of the most simple of breads, but it's at the top of my list for texture and flavor. Ingredients 5-6 cups flour 2 tbsp. yeast 2 tbsp. sugar 1 tbsp. salt 2 cups hot water 1 tbsp. poppy seeds (optional) Directions *No Oven Preheat* Mix 4 c. flour, yeast, sugar & salt together. Add water and beat 3 min. Add remaining flour, knead 8 min. Allow to rise 15 min. Divide. Shape into round loaves & place on baking sheet. Slash an X into the tops 1/4 " deep. Sprinkle with water and add poppy seeds. (OR) Shape into long slender loaves and make a slash the length of the loaf and about ¼ inch deep. You may want to sprinkle some cornmeal on baking sheet before placing the rounds or loaves on it. Place a pan of hot water on lowest shelf in the oven and place bread above. Turn oven on to 400*F and bake 40-50 min. Cuban Style Rice and Beans Ingredients: a little sunflower oil 1 onion, chopped 3 cloves of crushed garlic half a teaspoon of chilli powder the juice and rind of 1 lemon salt to taste 5 cups of cooked rice of your choice (this recipes is very adaptable though so use more or less if required) 2 cups of cooked beans (black turtle beans worked very well though you could just use tinned kidney beans to avoid soaking and cooking) Cook the beans and rice according to packet instructions. Heat the oil and cook the onion, garlic, chilli and lemon rind for a few minutes - mix this into the rice and beans with the lemon juice and serve. Sneak preview the all-new .com.
