vegan Oreo cake

Made this for a picnic this weekend and it turned out pretty yummy!

I combined parts of recipes to come up with a version of a giant Oreo

 

Vegan Oreo Cake

2 c plus 2 T sugar

2/3 c unsweetened cocoa powder

3 cups flour

2 t baking soda

1 t salt

2 c water

1/2 cup mild oil (canola)

2 T vinegar

1 T vanilla extract

1. Preheat oven to 350

2.Oil 2 9 inch cake pans and coat them with 2 T of Sugar and 2 T

cocoa powder

3. Mix flour, sugar, cocoa, salt, and soda in a large bowl.

4. Combine water, oil, vinegarm and vanilla.

5. Whisk liquid into flour mixture. Mix severa minutes, until lumps

are gone.

6. Pour batter into pans, knock pans on counter to release air

bubbles.

7. Bake 25-30 minutes, unil toothpick inserted comes out clean.

 

Filling

Mix 1/2 c soy marg or veg shortening, 1/4 cup soy or rice milk, 3

cups " veganized sugar, " and 1 t vanilla with hand mixer until fluffy.

Reserve half of frosting to go between cake layers. Mix 2 T cocoa

powder with other half of frostin to go on top of cake. Top frosted

cake with crumbled Neuman-O's or Oreo cookies.

 

Veganized Powdered Sugar 2 cups vegan/cane sugar

1/2 cup cornstarch.

Grind together in coffee grinder or food processer for about 2

minutes, make sure it is smooth, other wise your frosting will be

kind of gritty : )

 

Assmeble cake so white is in the middle of two choc cakes, choc

frosting on top, looks like a big Oreo.
