I am long time vegan, and have enjoyed reading a few of the messages and recipes. Here is a recipe that I have experimented with for a long while, and want to share. Tofu omelets (or tofu scramble**) Ingredients: 8 oz. extra firm tofu 1T vegetable oil ¼ t salt or to taste ¼ t chile powder or to taste ¼ t cumin coriander powder or to taste ¼ t turmeric or to taste Other spices to try: oregano, parsley, basil, etc. 1/8 cup onion, finely chopped 2 cloves pressed garlic, or to taste 1/8 cup finely chopped zucchini 1/8 cup finely chopped tomato 1 slice of bread without crust, crumbled 2T cilantro •Rinse and drain tofu, and squeeze out as much moisture as possible (place tofu in a colander and gently press from the top using a cloth or paper towel; let set for about 10 minutes to allow more moisture to drain off) •Place tofu in a bowl and use a fork or your hands to crumble •Stir in spices; combine thoroughly •Add onion, garlic, zucchini, tomato, and cilantro •Use your hands to thoroughly mix all the ingredients together •Add crumbled slice of bread and mix ingredients again •Add oil to hot non-stick skillet •Make patties about 3 inches in diameter from the mixture; it works best to make them as you go (as opposed to ahead of time) to minimize the risk of them falling apart •Cook patties on low to medium heat until browned on each side (about 4-5 minutes per side) Makes about 6-7 patties **If they fall apart, just make scrambled tofu! Some people like the presentation of the omelets, but it tastes the same. I think the key to holding the omelets together is getting out as much moisture as possible out of the mix before making the patties, cooking them slowly and FINELY chopping the veggies.
