Guest guest Posted June 4, 2006 Report Share Posted June 4, 2006 Grilled Asparagus Salad 2 lbs. asparagus 1 tbsp. fresh basil 2 tbsps. fresh chopped mint 1 1/2 tbsps. sherry vinegar 1 tbsp. lemon zest salt & pepper to taste 1/4 cup olive oil 2 green onions chopped 1 cup toasted and chopped hazelnuts 4 ozs. goat cheese Grilled asparagus salad In a bowl place the vinegar, onions, mint, basil, lemon zest, salt and pepper. Slowly whisk in the oil. Heat a grill and cook the asparagus for approximately 5 minutes. Toss the asparagus into a bowl with the dressing and hazelnuts.
