Guest guest Posted June 4, 2006 Report Share Posted June 4, 2006 We had a spaghetti squash at home and guidelines for a spaghetti squash dish from Donna so this became our dinner. Italian No Pasta Spaghetti Bake 1 spaghetti squash 3 cups bread crumbs 1/2 cup Parmesian cheese 1/4 cup olive oil 1/2 cup olive oil 3 onions, chopped 12 cloves garlic, chopped 1 bunch asparagus cut in 1-2 inch lengths sliced tomatoes 1 tsp. black pepper 2 tsp. Italian herb mixture 1-2 Tbsp. balsamic vinegar cheese Parmesian cheese Steam or bake spaghetti squash.( I tried steaming it as we had a discussio on this forum recently. Actually I pressure cooked it but maybe too long. It was mushy. I think next time I would bake it unless I find out from this group how to steam it a better way. Scoop out the squash while discarding the seeds. Mix with bread crumbs, Parmesian cheese and 1/4 cup olive oil. Bake in preheated 350 degree oven. Take out when golden brown. Saute onion, asparagus and garlic in 1/2 cup extra virgin olive oil and mix in herb mixture and Balsamic vinegar. Top with sliced tomatoes and then cheese with Parmesian cheese on top.
