Dinner Idea: Spagetti Squash and red beans over wild rice

I made this tonight, but I don't know exact measurements....

 

Spagetti Squash and red beans over wild rice

 

Wild Rice Pilaf (Cooked to package directions, or any other type

of rice, I always add veg boulion to my cooking water for both

rice and beans)

 

Olive Oil

 

1 med Spaghetti Squash

 

Red Beans, cooked (I cooked a whole package of dried red beans,

only used half for this recipe)

 

3 leaves of Bok Choy

 

1 White or yellow onion

 

3 large cloves garlic

 

1 small can tomato sauce

 

Salt and pepper

 

Vegtable Seasoning

 

Dash of white wine

 

Pierce Spaghetti Squash all over with sharp knife. Place on

plate and microwave on high for 10 minutes. Rotate and turn

over, microwave additional 5 minutes or less. Let cool for few

minutes before slicing in half. Remove just the longest strings

and the seeds. With a spoon scoop out the remaining

spaghetti-like flesh.

 

Dice garlic, onion and all the white and half the green of the

bok choy. Saute in olive oil until onions soften. Add wine and

tomato sauce and bring to simmer. Add squash, beans and

remaining ingredients (excluding rice). Simer few moments to

meld flavors. Serve over rice with a nice salad.
