After seeing Catherineq's feta dressing post, i am thinking that would work great in this recipe; gonna try that next time. Italian Vegetable Salad 5 cups broccoli florets [about 1 large bunch] 5 cups cauliflower florets 4 plum tomatoes, chopped 1 medium cucumber, seeded and chopped 1 medium sweet onion, thinly sliced 1 cup sliced carrots 2 cans [2 1/4 oz. each] sliced black olives, drained 1/2 cup sliced stuffed olives 1 cup Italian dressing 1 cup creamy Italian dressing 1 cup shredded mozzarella cheese 1/2 cup shredded Parmesan cheese In a large salad bowl, combine the vegetables. Mix together the salad dressings; pour over veggies and toss to coat. Cover and refrigerate for at least 4 hours. Stir in cheeses just before serving.
