I'm sure somebody already answered the tofu question, but you don't have to keep it in a bowl of water unless you don't cook all of it when you first open the package. Just cook it all and you'll be fine. I really like tofu. My husband wants it browned for almost all applications because he doesn't like the texture of less-cooked tofu. I like to bake slabs in the oven that have been marinated in soy, hot sauce, salsa, oil, garlic, salt and pepper. And we make tofu curry and Pad Thai or similar noodle dishes a lot. It's yummy! Sarah whose favorite comfort foods include mac and cheese and mashed potatoes. And a good bowl of chili.
