It is bland of flavor but it takes on the flavors of whatever you season it with; just like meat does. Tofu is so versatile! It is a vegan-must food, IMO. It is made out of bean curd, though i have never tried making my own, i do have some cookbooks that describe the process. It is so readily available in so many different textures that i have never bothered. Our files section here has many recipes for incorporating tofu in delicious ways. Check here: Then go to the 'Main Dish II' folder, and scroll down to the 'Tempting Tofu' folder. There are many more tofu ideas in other folders, but that one would be a good start. It is SO versitile, you will find a way to work with it. It definately cures the protein cravings I get, and it is much cheaper than purchasing all those pre-made meat alternatives that we were praising last week! I have made my own tofu, it isn't too hard, but price wise, if you are going to use store-bought soy milk, you might as well just buy tofu. Otherwise, you have to buy dried soy beans and it is a longer process. Time wise, I value the little time I have and would rather make my own bread or make baked tofu or something, it isn't very efficient or practical for me to make it from scratch. Oh, also, don't buy the silken tofu in cardboard boxes (like this: [1]http://www.asianfoodgrocer.com/index.asp?PageAction=VIEWPROD & ProdID=824) until you really get the hang of working with tofu. I have known more people that have done that and are really turned off by tofu due to it. Buy the tofu in bulk or in plastic containers with a sheet of plastic sealing it.
