It is always nice to have quick-fix treats like these in the freezer. Enjoy! Mexican Cheese Melts 4 oz. cheddar cheese, grated 4 oz. Monterey Jack cheese, grated 1 small can chopped green chilies [4 oz.] 1 clove garlic, minced 1 cup mayonnaise Small sliced of sourdough bread [amount depends on size of loaf rounds] Mix the cheese, chilies, garlic, and mayo in a bowl. Spread mixture on the sliced bread rounds and place on a cookie sheet; freeze until firm. When frozen, stack slices and store in a plastic bag in freezer. [i often put small strips of wax paper between slices so they don't stick together] Do not defrost. Bake at 325û until cheese is melted. Excellent for lunches, snacks or as an appetizer.
