It was inspired by a recipe that is similar in my 'Simply Heavenly' cookbook, but theirs called for less margarine and coconut milk.... i didn't have any onhand so i just used plain soy milk instead. Curried Peas, Carrots, and Potatoes 1 cup onion, chopped 1 tsp. garlic, minced 1 1/2 tsp. curry powder 1 Tbs. vegan margarine 3 cups potatoes, cooked and cubed 1 cup peas [if frozen, thawed] 1 cup sliced carrots, cooked crisp-tender 1/2 cup boiling water 1/2 cup soy milk Sea salt, to taste Saute the onion, garlic, and curry powder in the margarine until the onions are transparent. Add the potatoes, peas, and carrots, stirring until all are coated in margarine and seasonings. Add the hot water and cook for a few minutes. Then add the milk and cook until heated through. Sprinkle sea salt to taste.
