This is a great way i found to make just enough for myself and my dh; more dressed up than how we usually eat it. Autumn Squash 1 cup mashed cooked acorn or butternut squash 1/2 cup crushed butter-flavored crackers, divided 4 Tbs. butter, melted, divided 1 egg, lightly beaten 1 Tbs. brown sugar 2 tsp. Dijon mustard 1/8 tsp. garlic salt Pepper to taste In a bowl, combine squash, 1/4 cup cracker crumbs 2 tablespoons butter, egg, brown sugar, garlic salt. and pepper; mix well. Pour into a greased small baking dish. [about 2 1/2 cup size] Combine remaining cracker crumbs and butter; sprinkle over top. Bake, uncovered, at 350û for 20 minutes or until a knife comes out clean.
