Guest guest Posted October 17, 2005 Report Share Posted October 17, 2005 I made something very similar to this last week, sliced carrots with the sliced potatoes, I topped with some store bought bread crumbs, really tasty. Instead of boiling the veggies first, I sliced them both and a whole white onion, then sauted them slowly in some olive oil and cloves of garlic, then I put them with the other ingredients in a dish and baked them to finish them off and brown the top. I really liked the added carrots and onion, I never though of adding spinach, I'll try that next!
