hi Angela~ recipe: scalloped potato & bean casserole

Pure genius! i never thought to add beans to

scalloped potatoes. Definately will have to try

this comfort food soon. Thank you. :)

> uncovering it the last 10-15 min or so ( so the cheese on top gets a little

brown) is good too.

> That's it, basic scalloped taters with additions. :>)

I made something very similar to this last week, sliced carrots

with the sliced potatoes, I topped with some store bought bread

crumbs, really tasty.

 

Instead of boiling the veggies first, I sliced them both and a

whole white onion, then sauted them slowly in some olive oil and

cloves of garlic, then I put them with the other ingredients in

a dish and baked them to finish them off and brown the top.

 

I really liked the added carrots and onion, I never though of

adding spinach, I'll try that next!
