Do you have a recipe for the scalloped potato and bean casserole? ~ pt ~ I forget where I read about it, but there was a little boy who was fascinated by sea stars and their ability to regenerate body parts. Hi PT, don't have measurements, Mama's version of scalloped potatoes ( except she used h*mburgr ) - let's see, what all's in it......... boiled potatoes, sliced sliced onion garlic powder salt + pepper - optional - I leave them out and use some at the table. cooked beans - usually I use pinto but any bean's ok ( or spinach, or any chopped veggies) velveeta cheese, + any other cheese ya got, I like a bit of sharp cheddar mixed in milk or water in lightly greased pan layer potatoes onions beans sprinkle of garlic powder ( and any other spices you choose ) sliced or grated cheese about 1/2 inch milk or water in bottom of pan repeat layers ( except liquid) 'till pan full, top layer should be cheese cover loosely with foil, or use pan with lid bake in 350 F oven for 30-45 min. variations I've made: ( bet you'll come up with some too *grin*) different cheeses, different veggies layered with the taters and onions. mashed taters instead of sliced. with spinach I like to use monterey jack cheese. a layer of sliced mushrooms with whatever else you use is great too. uncovering it the last 10-15 min or so ( so the cheese on top gets a little brown) is good too.
