Guest guest Posted October 12, 2005 Report Share Posted October 12, 2005 i had to laugh when i came to the group to post this recipe and saw Shawn's post with that funny article calling artichokes the most annoying vegetable. hahaha This is a very easy to prepare sandwich filling. i will sometimes double it as the flavor gets better by the next day. Great served as a dip, too. Artichoke-Olive Sandwich Spread cream cheese [8 oz.] softened 1 jar [6 oz.] marinated artichoke hearts, drained and chopped* * reserve marinade from the artichoke hearts. 1/4 cup [packed] chopped black olives 1/2 tsp. onion powder 1/2 tsp. oregano 3 Tbs. reserved artichoke marinade Mix the cream cheese with an electric mixer until soft and smooth. Stir in artichoke hearts, olives, seasonings, and reserved artichoke marinade. Cover and chill. Yield: 1 1/2 cups For a wonderful sandwich take 1/4 to 1/2 cup of this spread and smooth inside a whole wheat pita pocket. Then stuff in a bunch of shredded carrots, sauteed red onions, mushrooms and whatever veggies you enjoy. So delicious! ~ pt ~ Mother of our mothers, Foremothers strong.
