Guest guest Posted October 7, 2005 Report Share Posted October 7, 2005 Shawn, you will like this one, but all the process cheese-hatin' snobs will want to look the other way! hahaha This is another great crowd-pleasing dish that is guaranteed to get you invited back to the next party, no matter how silly you acted with the lampshade on your head. Baked Macaroni 'n' Cheese 1 package elbow macaroni [16 oz.] 2 pounds process American cheese, cubed 8 ounces Swiss cheese, cubed 1 medium green pepper, chopped 1 medium onion, finely minced 1 can diced green chilies, drained [4 oz.] 1 jar diced pimientos, drained [2 oz.] 4 eggs 4 cups milk 1/2 tsp. pepper Salt, to taste 1/4 tsp. paprika Cook macaroni, drain and rinse. Add cheeses, green pepper, onion, chilies, and pimientos. Combine eggs, milk, and pepper; add salt if you want. Pour over macaroni mixture and mix well. Pour into two greased 13 x 9 x 2 inch baking pans. Sprinkle with paprika. Bake uncovered at 350û for 35 minutes or until bubbly and browned.
