Guest guest
Here is a nice salad to take to a gathering of friends or to serve to a large group. It is a nice blend of mild dressing, crisp-tender beans and lettuce greens. i like to play around with the lettuce combinations, and sometimes i add garlic with a dash of cayenne. Use your imagination. Beans 'N' Greens Dressing: 3/4 cup vegetable oil 1/4 cup red wine vinegar 1 1/2 tsp. salt 1 tsp. sugar 1/2 tsp. celery seed 1/2 tsp paprika 4 cups cooked cut fresh green beans [2 inch pieces] 8 cups torn lettuce 4 cups torn fresh spinach 1 cup shredded Swiss cheese 1/2 cup grated Romano cheese In a jar with a tight-fitting lid, combine first six ingredients; shake well. Pour over green beans and let stand for 15 to 20 minutes. Just before serving, drain beans, reserving marinade. In a salad bowl, combine beans, lettuce, spinach and cheeses. Drizzle with reserved marinade; toss to coat. Yield: 14 to 18 servings
