Stuffed Marrow Filling (Zucchini)

Hi

I made a lovely marrow last night, (Super size zucchini can't think

what you would call it). Here we say 'Stuffed Marrow' but I made it in

two half shells.

 

I used a mixture of carrots, apple, sweet red pepper, onion and white

butter beans for the filling. I used two teaspoons of curry powder to

add some zest to the mix. I will try to write everything down over the

weekend and post it up.

 

It was lovely and warming. I wrapped it all up in aluminium foil

though and it could have done with being open as the marrow wasn't

cooked through but otherwise it was fine.

That sounds excellent, Chris. Very clean and healthy as well. Nice.
