Guest guest
i love how simple and quick this recipe sounds. i am definately going to try it, and will use canned potatoes, too. i love canned potatoes! *lol* They are so cute and fun to cook with. Thanks for sharing your recipe. ~ pt ~ I thank Thee first because I was never robbed before; second, because although they took my purse they did not take my life; third, because although they took my all, it was not much; and fourth because it was I who was robbed, and not I who robbed. ~ Matthew Henry, minister (1662-1714) ~~~*~~~*~~~*~~~*~~~> , " Whittington5 " <critters> wrote: > The recipe is real simple.... you can use fresh or canned potatoes and tomatoes. > You peel and dice your potatoes. Or open the cans. I have used home canned or store bought cans of tomatoes. If using fresh potatoes cover with water and cook until tender. Then add in tomatoes. > If using canned products I usually use two to three large cans of potatoes to 1 large can of petite diced tomatoes . I just do it by site. So basically it's just diced potatoes, diced tomatoes and a thickening made with corn starch and milk and add salt and pepper. It is really good with a crusty hot bread. > Robin
Guest guest
Glad I could contribute something that someone might like. We sure enjoy it! Let me know when you try it and if you like it. My MIL makes it. She is from the mountains and they ate if often when she way at home since it was simple and cheap. Of course they used homegrown potatoes and home canned tomatoes but it's still good the more " modern " way. Robin
