Guest guest Posted October 5, 2005 Report Share Posted October 5, 2005 These are wonderful biscuits to go with a steaming bowl of soup or stew. i have made them vegan before with good results... just use soy milk [plain], and vegan margarine, like Earth Balance brand. Enjoy! Tomato-Basil Drop Biscuits 1/2 cup finely chopped green onions 1 Tbs. olive or vegetable oil 3/4 cup chopped fresh tomato, drained 1/4 cup minced fresh basil or 4 tsp. dried 2 cups all-purpose flour 1 Tbs. baking powder 1 tsp. salt 1/4 tsp. garlic powder 1/4 tsp. coarsely ground black pepper 1/3 cup cold margarine 2/3 cup milk In a small skillet, saute onions in oil until tender. Add tomato; cook 1 minute longer. Remove from heat and stir in basil. Cool slightly. In a bowl, combine flour, baking powder and seasonings. Cut in shortening until the mixture resembles coarse crumbs. Stir in milk and tomato mixture just until combined. Drop by heaping spoonfuls 2 inches apart on greased baking sheets. Bake at 425û for 10 to 12 minutes or until golden brown. Remove to cool slightly; serve warm.
