Guest guest Posted October 5, 2005 Report Share Posted October 5, 2005 The recipe is real simple.... you can use fresh or canned potatoes and tomatoes. You peel and dice your potatoes. Or open the cans. I have used home canned or store bought cans of tomatoes. If using fresh potatoes cover with water and cook until tender. Then add in tomatoes. If using canned products I usually use two to three large cans of potatoes to 1 large can of petite diced tomatoes . Add salt and pepper to taste. Then make thickening with cold milk and corn starch. Pour into hot soup mixture. You can add more milk to thin if it gets too thick. I don't have a " real " recipe. I just do it by site. So basically it's just diced potatoes, diced tomatoes and a thickening made with corn starch and milk and add salt and pepper. It is really good with a crusty hot bread.
