They were melt in your mouth Autumn goodness. Apple Cinnamon Muffins 1 1/2 cups all-purpose flour 1/2 cup sucanat [or sugar] 1 3/4 tsp. baking powder 1/2 tsp. salt 1/2 tsp. ground cinnamon 1/8 tsp. ground nutmeg 1 egg 1/2 cup milk 3 Tbs. vegetable oil 3 Tbs. applesauce 1 medium tart apple, peeled and grated Topping: 1/4 cup packed brown sugar 1 Tbs. all-purpose flour 2 Tbs. cold butter or margarine 1/2 cup old-fashioned oats 1/4 cup finely chopped walnuts In a bowl, combine the first six ingredients. In another bowl, combine egg, milk, oil and applesauce. Stir into dry ingredients until just moistened. Fold in grated apple. Fill greased or paper-lined muffin cups two-thirds full. For topping, combine brown sugar and flour. Cut in butter until crumbly. Stir in oats and nuts. Sprinkle over muffins. Bake at 400û for 18 to 22 minutes or until toothpick comes out clean. Cool for 5 minutes before removing from pan. Serve warm.
